Today's post is not my usual (and don't worry I don't plan on being a food blogger), but as I do post about life every now and again I thought I'd share this recipe with you!
I recently started to make healthy food choices, don't get me wrong i'm a chocoholic and still love takeaways but for a main meal I've started making healthier dinners. Making them rather than pre-made or quick easy options, as well as this I've also started to cut down on red meat, making more veggie and chicken dishes.
This is a veggie recipe for stuffed peppers (and it makes 2):
1. Prep your peppers- Wash, Cut out stork and seeds so your left with a hollow pepper ( I would say 1 pepper per person is enough... its really filling!)
2. Chop an onion, grate a carrot, and chop a handful of mushrooms
3. In a pan fry off the onions, when there softened add the carrot, and a handful of red lentils (I pre-soaked mine but I don't think you have to)
4. Then add some vegetable stock for flavour with a little water (this is to your taste!)
5. Throw in the mushrooms and allow the stock to reduce
6. Grate or tear some cheese of your choice, I'm using left over halloumi
7. When the stock is reduced take it off the heat and stir in the cheese, leaving some for the top of the peppers!
8. Stuff the peppers with the mixture and add some cheese on top!
9. Throw them in the oven to grill the peppers, I usual put it in at a high temperature for about 10mins! or untill the peppers are soft and cooked
10. Serve with whatever you like! I have cous cous because its light compared to the filling peppers!
